Serving Size: Topping for approximately 6 medium-sized pancakes
Ingredients:
-1 medium apple
-1 1/2 tablespoon of unsalted butter
-2/3 teaspoon cinnamon
-1 teaspoon brown sugar
-1/4 cup chopped pecans (optional)
Directions:
1) Peel and chop one medium apple in to 1 inch cubes. Use whatever apples you have on hand.
2) Melt a tablespoon of butter in a small pan over medium heat.
3) Add the chopped apple to the pan and cook for about 10 minutes. For a crispier texture cook for approximately 7 minutes. If you are adding pecan I would add them to the pan approximately 5 minutes after the apples have been cooking.
4) Add a 2/3 teaspoon of cinnamon, 1 teaspoon of brown sugar and another 1/2 teaspoon of butter to the pan and toss the apples until completely coated. Cook for an additional 1-2 minutes.
