Servings: approximately 12 medium pancakes
-2 1/3 cups Pancake mix (I used Aunt Jemima Pancake Mix)
-1/2 cup canned pumpkin
-1 1/4 cups milk (2%)
-1/4 cup vegetable oil
-2 tablespoons sugar
-1 teaspoon pumpkin pie spice
-1/4 teaspoon cinnamon
-1/2 cup chopped pecans
-2 large eggs
1) Heat pan on medium heat.
2) Grease pan with butter (I used margarine).
3) In medium bowl, stir all pancake ingredients until well blended
4) Cook on one side until the edges are brown. Flip, and cook on the other side until cooked through.
